GREEK ME

Hello guys!  So I came across this amazing photo of something that looked like roasted tomatoes , onions and feta, but the recipe was in Greek!  So after staring at the photo for what seemed like forever, I decided to concoct my own version of what I thought to be looking at and to my surprise the dish came out tasting AMAZING!!!!!  Easy, delicious and presents itself fabulous on any table.  So here is the recipe to my version of the photo and I called it Greek Me!



What you will need:
1.      Grape and Cherry Tomatoes
2.      Feta Cheese (In water) I used Vigo
3.      Small Onions (sliced and halved)
4.      Extra Virgin Olive Oil
5.      Fresh Sea Salt
6.      Fresh Ground Pepper






 Pour the tomatoes into a roasting pan;
add sliced onions and drizzle with olive oil. 
Add salt and pepper to taste and then crumble your feta all over. 

Bake at 375 degrees for 25 minutes and then broil for about 5 minutes and ENJOY!!!!

CHEESY VEGGIE CHICKEN DELIGHT



First, let me start by saying HAPPY belated NEW YEAR!  I can hardly believe that it is 2013.  Wow, how time flies.  My daughter will be 5 this year and I will be ***bleeeeep*** lol!  I traveled to Nashville, TN and Kentucky, I met some amazing people and made new friends!!    So lots of things have been going on!!  I am so, so sorry I have been away for so long and haven’t posted any new recipes, but the holidays killed me!  All I did was cook, clean and entertain.  I barely had a moment, let alone update my blog.  But I do have a new recipe to share with you guys which I absolutely LOVE!  Not only is it healthy but it tastes AMAZING!


The recipe idea originally came off of Pinterest and my friend kind of substituted some of the veggies because I don’t think she was a fan of artichokes.  She came over to my house one day and made it for me and I absolutely fell in love with it.  Since she made it, I kind of adopted the recipe, made a few changes and made it my own.  I hope you guys enjoy it and if you make it, please let me know how it turned out.

 CHEESY VEGGIE CHICKEN DELIGHT
            with Italian Herbs & spices

What you will need:
1.      6 Chicken breast cutlets (thinly sliced breast)
2.     Mojo (Badia) 1/3 of a cup
3.     Adobo to taste
4.     Black Pepper to taste
5.     Italian herbs seasoning to taste
6.    Minced garlic 1 tablespoon
7.     Oregano to taste
8.     Fresh basil leaves
9.     5 Roma tomatoes diced
10. 1 red pepper (cut in medium sized cubes)
11.   1 yellow pepper (cut in medium sized cubes)
12.  1 green pepper (cut in medium sized cubes)
13.  ½ of a red onion (sliced into rings)
14. White sliced mushrooms
15.  2 tablespoons of flour
16. 1 tablespoon of sugar
17.  Tomato basil feta cheese
18. 6 cheese Italian (Seargentos)
19. Parmesan cheese (the Artisan by Seargentos)

What to do:

1.      Take the 6 breasts and toss in mojo with minced garlic.  Season with adobo (lightly), Italian herbs, black pepper and oregano (to taste).  Sprinkle the flour over the chicken and set aside.  (the purpose of the flour is because the chicken releases a lot of juices).



2.     Chop the tomatoes, bell peppers and onions.  Add in the whole sliced white mushrooms and sprinkle with the sugar and toss. 



 3.     In a baking dish make a bed with the cut up veggies and place the chicken breasts over the bed of veggies.  Chop up some basil and sprinkle over chicken.  Spread ½ of the feta and shredded cheese over the entire dish and bake at 350 degrees for 45-50 minutes.  You want chicken to be juicy and tender (NOT DRY).



4.     Once the chicken is cooked through remove dish, place whole basil leaves all over the dish (approximately 6 leaves and sprinkle the remainder of the cheese.  Place under the broiler for about 3-5 minutes until you get that yummy golden cheesy crust.  Serve and Enjoy!
